These vegan brownies are rich, deeply chocolatey, and perfectly fudgy in the center. Flax eggs help bind the batter, while melted vegan butter and two types of sugar create a soft, chewy texture. Chocolate chips make every bite even more indulgent, and chopped walnuts can be added for extra crunch.

Ingredients
- 4 tbsp ground flaxseed
- ½ cup water
- ½ cup vegan butter, melted
- 1 cup white sugar
- 1 cup brown sugar
- 1 cup all-purpose flour
- 1 cup cocoa powder
- ½ tsp salt
- 1 tsp baking powder
- 1 tbsp alternative milk, preferably oat milk (or a splash as needed during mixing)
- 1 cup chocolate chips or roughly chopped chocolate
- ½ walnuts, chopped (optional)

Preparation
Step 1
Prepare the flax eggs: In a small bowl, stir together the ground flaxseed and water. Set aside for 5–10 minutes to thicken.
Step 2
Preheat the oven to 350°F (175°C). Line a 7 × 11-inch baking pan with parchment paper, leaving some overhang for easy removal.
Step 3
Melt the vegan butter: Measure ½ cup vegan butter (Earth Balance is preferred). Melt it in the microwave using a glass measuring cup, heating in 30-second intervals until fully melted.
Step 4
Mix the wet ingredients: In a large mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth. Add the thickened flax eggs and vanilla extract, and whisk again until fully combined.
Step 5
Add the dry ingredients: Mix the flour and cocoa powder directly into the bowl. Add the salt and baking powder. Stir everything together with a large wooden spoon until just combined—do not overmix.
Step 6
Fold in the chocolate chips: Gently fold in half of the chocolate chips.
Step 7
Transfer to the pan: Pour the batter into the prepared pan and smooth the top with the back of a spoon or your hands. Sprinkle the remaining chocolate chips evenly over the top.
Step 8
Bake for 35–40 minutes. The brownies may still look soft and slightly bubbly in the center, but they will firm up significantly as they cool.
Step 9
Cool before slicing: Let the brownies cool for 15 minutes in the pan. Use the parchment paper to lift them out, then cool on a wire rack for another 15–30 minutes before slicing and serving.
