About the Recipe

This cilantro lime dressing is fresh, bright, and easy to customize. Keep it light and pourable, or blend in avocado or non-dairy Greek-style yogurt for a creamy finish. It works well on tacos, grain bowls, roasted vegetables, salads, and more.

Ingredients

  • 2 cups fresh cilantro
  • 2 garlic cloves
  • ¼ cup fresh lime juice
  • 2 tsp agave syrup
  • ½ tsp ground coriander
  • ½ tsp sea salt, to taste
  • ½ cup extra-virgin olive oil
  • Make It Creamy (Choose One)
  • 1 ripe avocado
  • ½ cup plain unsweetened non-dairy Greek-style yogurt
  • Optional Add-Ins
  • 1 jalapeño, seeded (for a spicy kick)
  • 2 tbsp water (to thin, if needed)
  • 2 tbsp fresh parsley
  • ¼ tsp freshly ground black pepper
  • ½ tsp ground cumin
  • Zest of 1 lime

Preparation

Step 1


In a food processor or high-speed blender, combine the cilantro, garlic, lime juice, agave syrup, ground coriander, and sea salt. Pulse until everything is finely chopped.



Step 2


With the motor running, slowly drizzle in the olive oil and blend until the dressing is smooth and emulsified.



Step 3


To make the dressing creamy, blend in 1 ripe avocado or ½ cup plain unsweetened non-dairy Greek-style yogurt until silky smooth.



Step 4


If the dressing is too thick, blend in 1–2 tablespoons of water until it reaches your desired consistency.



Step 5


Taste and adjust the seasoning, adding more lime juice, agave syrup, or salt as needed. Store in an airtight container in the refrigerator for up to 5 days; if using avocado, enjoy within 2–3 days.
