These crispy mashed potato tacos are one of my favorite comfort foods, and they’re the perfect way to use up leftover mashed potatoes. Filled with creamy potatoes, sweet caramelized onions, and melty vegan cheese, then pan-fried until golden and crisp, they’re simple, satisfying, and endlessly customizable.

- 2 tablespoons olive oil, divided
- 1 large onion, thinly sliced
- 2 cups mashed potatoes (leftover or freshly made)
- 1 cup shredded vegan cheese
- 8 corn or flour tortillas

- Diced tomatoes or pico de gallo
- Pickled red onions
- Pickled jalapeños

Preparation
Step 1
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced onion and cook for 10–15 minutes, stirring occasionally, until soft and caramelized. Set aside.
Step 2
If the mashed potatoes are cold, warm them slightly so they’re easier to spread.
Step 3
Lay a tortilla flat and spread a layer of mashed potatoes over one half. Top with caramelized onions and a sprinkle of vegan cheese.
Step 4
Fold the tortilla in half and gently press to seal. Repeat with the remaining tortillas.
Step 5
Heat the remaining tablespoon of oil in a large skillet over medium heat.
Step 6
Cook the tacos for 3–4 minutes per side, pressing gently with a spatula, until the tortillas are golden and crisp and the cheese has melted. Add a little more oil between batches if needed.
Step 7
Transfer to a plate lined with paper towels for a minute, then serve immediately with your favorite toppings.
