Ingredients
- 1 cup olive oil
- 2 tbsp minced fresh herbs, such as rosemary, thyme, oregano, or a mix
- 6 garlic cloves, minced
- 2 cups lukewarm water
- 2¼ tsp rapid-rise yeast
- 1½ tsp sugar
- 5 cups all-purpose flour, divided
- ¾ tsp salt, plus flaky salt for garnish

Preparation
Step 1
Prepare the garlic and herb oil: Mince the garlic and chop the herbs. Heat the olive oil over medium heat, add the garlic and herbs, and simmer for about 1 minute until fragrant and lightly golden.

Activate the yeast: In a large mixing bowl, whisk together the warm water, yeast, and sugar. Let sit for 5–10 minutes, until foamy.

Mix and knead the dough: Whisk together 2 cups flour, ⅓ cup of the herb oil, and the yeast mixture. Rest for 3 minutes. Add the remaining flour and salt, mix into a dough, then knead for about 5 minutes.

Return the dough to the bowl, cover, and let rise in a warm place for 45 minutes, or until doubled.
Step 5
Prepare the pan and oven: Spread some of the remaining garlic and herb oil over a 9 × 13-inch baking pan. Preheat the oven to 410°F (210°C).

Shape and top: Transfer the dough to the pan and gently stretch it to fit. Press dimples over the surface with your fingertips, drizzle with olive oil, and sprinkle with flaky salt.
Step 7
Bake for 25 minutes, until lightly golden with crisp edges. Bake an additional 5–10 minutes for a deeper golden crust if desired.

Remove from the oven and let cool slightly before slicing and serving.
