This Japanese carrot ginger dressing is bright, creamy, and full of fresh flavor. Carrots, onion, ginger, rice vinegar, soy sauce, and neutral oil blend into a smooth, savory dressing.
Ingredients
- 7 oz (200 g) carrots, peeled and roughly chopped
- 4 oz (115 g) onion, roughly chopped
- 2 tbsp fresh ginger, peeled and roughly chopped
- 1 tbsp granulated sugar
- ¼ cup soy sauce or tamari, more to taste
- ½ cup rice vinegar
- ½ tsp sea salt
- ¾ cup canola oil or other neutral vegetable oil
Optional Add-Ins
- 1 garlic clove
- 1 tsp toasted sesame oil
- 1 tbsp white miso paste
- 1 tsp maple syrup
- Freshly ground black pepper

Step 1
Add the carrots, onion, ginger, sugar, soy sauce or tamari, rice vinegar, and sea salt to a high-speed blender.
Step 2
Blend until the vegetables are completely smooth.
Step 3
With the blender running on low speed, slowly drizzle in the canola oil until the dressing becomes smooth, creamy, and fully emulsified.
Step 4
If using any optional ingredients, blend them in now.
Step 5
Taste and adjust the seasoning, adding more soy sauce for saltiness, rice vinegar for brightness, or sugar or maple syrup for additional sweetness.
Step 6
Chill for at least 30 minutes before serving to allow the flavors to meld.
Step 7
Serve over iceberg or romaine lettuce, cabbage salads, cucumber salads, grain bowls, roasted vegetables, steamed edamame, or as a dip.
