- 1 large sweet potato, sliced into ¼-inch (6 mm) rounds
- 1–2 tablespoons olive oil
- Salt and black pepper, to taste
Topping
- 1 cup cherry tomatoes, halved or quartered
- ½ red onion, finely diced
- ¼ cup fresh basil, chopped
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon olive oil
- Salt and black pepper, to taste
- ½ cup crumbled vegan feta (such as Violife)

Step 1
Preheat the oven to 425°F (220°C).

Arrange the sweet potato slices in a single layer on a baking sheet. Brush both sides with olive oil and season with salt and pepper.

Roast for 20–25 minutes, flipping halfway through, until the slices are tender and lightly caramelized around the edges.

Meanwhile, prepare the topping. In a medium bowl, combine the cherry tomatoes, red onion, basil, parsley, olive oil, and a pinch of salt and pepper. Toss well and let the mixture sit while the sweet potatoes finish roasting.

Once the sweet potato slices are cooked, allow them to cool for a few minutes.

Top each roasted sweet potato slice with a spoonful of the tomato mixture.
