About the Recipe
These teriyaki bowls pair hearty homemade seitan or crispy tofu with fluffy white rice and roasted broccolini. Everything is finished with a glossy homemade teriyaki sauce for a satisfying weeknight dinner or meal-prep bowl.

Ingredients
Teriyaki Sauce
- ½ cup low-sodium tamari or soy sauce
- ½ cup vegetable broth
- 3 tbsp maple syrup or agave nectar
- 1 tbsp light brown sugar
- 1 tbsp rice vinegar
- 1 garlic clove, minced
- 2 tsp freshly grated ginger
- 1 tsp roasted sesame oil
- 1½ tbsp cornstarch
- ¼ tsp red pepper flakes (optional)
- Toasted sesame seeds (optional)
Protein
- 4 cups homemade seitan, cut into bite-sized pieces
- Or 1 (14–16 oz / 400–450 g) block extra-firm tofu, pressed, cubed, and cooked until crispy
- 1 tbsp neutral oil (if cooking seitan)
- Broccolini
- 2 bunches broccolini, trimmed
- 1 tbsp olive oil
- Salt and freshly cracked black pepper, to taste
- For Serving
- 4 cups cooked white rice
- Sliced green onions (optional)
- Toasted sesame seeds (optional)

Preparation
Step 1
Preheat the oven to 425°F (220°C). Toss the broccolini with olive oil, salt, and black pepper on a baking sheet. Roast for 12–15 minutes, turning halfway, until tender with lightly charred edges.
Step 2
Whisk the tamari, vegetable broth, maple syrup, brown sugar, rice vinegar, garlic, ginger, sesame oil, cornstarch, and red pepper flakes, if using, in a small saucepan.
Step 3
Bring the sauce to a gentle simmer over medium heat, whisking frequently. Cook for 3–5 minutes until thick enough to coat the back of a spoon, then remove from the heat.
Step 4
For seitan, heat the neutral oil in a large skillet over medium-high heat and sauté the seitan for 5–8 minutes until lightly browned and crisp. For tofu, prepare the tofu until crispy, then transfer it to a large skillet over medium heat.
Step 5
Pour the teriyaki sauce over the seitan or tofu and toss until evenly coated. Cook for 2–3 minutes, allowing the sauce to caramelize slightly and become glossy.
Step 6
Divide the rice among four bowls. Top with the teriyaki seitan or tofu, add the roasted broccolini, and garnish with green onions and sesame seeds if desired.
