This tofu butter chicken-style curry is rich, creamy, and packed with warming spices. Crispy tofu is coated in a smooth tomato and coconut sauce with garlic, ginger, and garam masala.

Ingredients
For the Tofu
- 2 blocks extra-firm tofu, cubed
- Olive oil
- 1 tbsp soy sauce
- 2 tsp curry powder, or to taste
- For the Sauce
- 3 tbsp vegan butter
- 1 white or yellow onion, diced
- 1 tbsp fresh ginger, grated
- 4 garlic cloves, minced
- 2 tbsp garam masala
- 2 tsp curry powder
- 1 tsp ground coriander
- 1 tsp paprika, or to taste
- 1 tsp salt, or to taste
- 6 tbsp tomato paste
- 1 can coconut milk or coconut cream
To Serve
- White or brown rice
- Fresh cilantro
- Naan
- Red chili flakes
- Diced chilies

Preparation
Step 1
Heat oil in a pan over high heat. Add the cubed tofu and cook, tossing frequently, until the sides begin to crisp.
Step 2
Add the soy sauce and curry powder and continue cooking until the tofu is fully crisp. Remove from the heat.
Step 3
Melt the vegan butter in a large pan over medium-high heat.
Step 4
Add the onion and sauté for about 5 minutes.

Add the garlic and ginger and cook for another minute.

Add the garam masala, curry powder, coriander, paprika, salt, tomato paste, and coconut milk.

Stir until smooth and cook over low heat for at least 5 minutes.
Step 8
Add the tofu and toss until thoroughly coated and heated through.
Step 9
Serve over rice with naan and desired toppings.
