About the Recipe
This easy vegan banana bread is soft, moist, and packed with ripe banana flavor. The batter comes together in one bowl and can be customized with walnuts, vegan chocolate chips, or both. It keeps beautifully for several days and tastes even better the next day.

Ingredients
- 1¼ cups mashed ripe banana (about 2 large or 3 small bananas)
- 1 cup unsweetened soy milk or other unsweetened non-dairy milk
- ⅓ cup canola oil
- 1 cup granulated sugar
- 2 tsp apple cider vinegar
- 1 tbsp vanilla extract
- 2¼ cups all-purpose flour
- 1 tbsp baking powder
- ¾ tsp salt
- Optional Mix-Ins
- ¾ cup chopped walnuts
- ¾ cup vegan chocolate chips
- Use either mix-in, both, or neither
- Optional Topping
- A handful of vegan chocolate chips

Preparation
Step 1
Preheat the oven to 400°F (200°C). Lightly grease a loaf pan or use a silicone loaf pan.
Step 2
In a large mixing bowl, mash the bananas until mostly smooth. Measure to ensure you have 1¼ cups of mashed banana.
Step 3
Add the soy milk, canola oil, sugar, apple cider vinegar, and vanilla extract. Whisk until well combined.
Step 4
Add the flour, then sprinkle the baking powder and salt over the top. Stir with a wooden spoon or spatula until just combined. Do not overmix; a few small lumps are fine.
Step 5
Fold in the walnuts, chocolate chips, or both, if using.
Step 6
Pour the batter into the prepared loaf pan and smooth the top. Sprinkle with extra chocolate chips, if desired.
Step 7
Bake for 45–55 minutes, until the loaf is golden brown and a toothpick inserted into the center comes out clean.
Step 8
Let the banana bread cool in the pan for 10–15 minutes, then transfer it to a wire rack to cool completely before slicing. For especially clean slices, chill the loaf briefly before cutting.
