Seared Endives
- 2 endives, bottoms trimmed and halved
- 1 tbsp olive oil
- Salt, to taste
- Freshly ground black pepper, to taste
- Walnut Gremolata
- 2 garlic cloves, minced
- ⅓ cup walnuts, chopped
- 2 tbsp fresh parsley, finely chopped
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
To Finish
- Vegan parmesan

Step 1
Combine the walnuts, parsley, lemon zest, lemon juice, and minced garlic in a small bowl to make the gremolata. Set aside.
Step 2
Heat the olive oil in a large skillet over medium-high heat.

Place the endive halves cut-side down in the pan. Season with salt and pepper, cover loosely with a lid, and cook for 7–10 minutes until the cut sides are deeply golden and caramelized.
Step 4
Transfer the seared endives to a serving platter with the cut sides facing up.
Step 5
Generously spoon the walnut gremolata over the endives and finish with a sprinkle of vegan parmesan before serving.
