This creamy chipotle ranch is rich, smoky, tangy, and packed with fresh herbs. Cashews create an ultra-creamy base, while chipotle adds just the right amount of smoky heat. Use it as a dressing, dip, sandwich spread, or sauce for tacos and bowls.
Ingredients
- 1 cup raw cashews, soaked in hot water for 30 minutes (or overnight in cold water), then drained
- ⅔ cup unsweetened almond milk
- 2 tsp fresh lemon juice
- 1 garlic clove
- 1 tsp apple cider vinegar
- ½ tsp sea salt, plus more to taste
- 1 chipotle pepper in adobo sauce
- ¼ tsp onion powder
- ¼ tsp ground chipotle chili (or chili powder, not cayenne), plus more to taste
- ½–1 tsp maple syrup (optional)
- 2 tbsp fresh dill, finely chopped (or 2 tsp dried dill)

Step 1
Add the soaked cashews, almond milk, lemon juice, garlic, apple cider vinegar, sea salt, chipotle pepper, onion powder, ground chipotle chili, maple syrup (if using), and dill to a high-speed blender. Blend until completely smooth and creamy, stopping to scrape down the sides as needed.
Step 2
If the dressing is thicker than you would like, blend in an additional tablespoon or two of almond milk until it reaches your desired consistency. Taste and adjust with more salt, lemon juice, chipotle, or maple syrup.
Step 3
For the best flavor, refrigerate for at least 30 minutes before serving. Store in an airtight container in the refrigerator for up to 5 days; whisk in a splash of almond milk if it thickens.
