These garlic soy sautéed green beans are crisp, savory, and full of flavor. Garlic and soy sauce create a simple glaze that pairs well with rice, tofu, seitan, or noodle dishes.

Ingredients

  • 1 lb (450 g) fresh green beans, trimmed
  • 1 tbsp olive oil or sesame oil
  • 4 garlic cloves, minced
  • 2 tbsp soy sauce or tamari
  • 1 tsp maple syrup or agave, optional
  • ½ tsp red pepper flakes, optional
  • Freshly cracked black pepper, to taste
  • 1 tsp toasted sesame seeds, optional

  • Green onions, sliced

Preparation

Step 1


Bring a large pot of salted water to a boil.



Step 2


Add the green beans and cook for 3–4 minutes, until bright green and just tender.



Step 3


Drain and rinse under cold water or transfer to an ice bath. Drain well.



Step 4


Heat the oil in a large skillet over medium-high heat.



Step 5


Add the garlic and sauté for 30–60 seconds, stirring constantly.



Step 6


Add the green beans and toss to coat in the garlic oil.



Step 7


Pour in the soy sauce, maple syrup or agave if using, and red pepper flakes.



Step 8


Cook for 2–3 minutes, stirring frequently, until tender-crisp and evenly coated.



Step 9


Season with black pepper.



Step 10


Transfer to a serving dish and garnish with sesame seeds, green onions, or chili crisp if desired.
