About the Recipe

This tahini green goddess dressing is creamy, herb-packed, and full of bright lemon flavor. Tahini gives it body while parsley, cilantro or basil, dill, garlic, and green onion keep it fresh and vibrant.

Ingredients

  • 1½ cups packed fresh parsley, leaves and tender stems
  • 1½ cups packed fresh cilantro or fresh basil, leaves and tender stems
  • ½ cup packed fresh dill, or 1–2 tsp dried dill weed
  • 1 green onion, chopped
  • 2 garlic cloves
  • ½ cup tahini
  • Juice of 2 lemons
  • ¼–1 cup water, as needed
  • ½ tsp kosher salt, or to taste
  • Freshly ground black pepper, to taste

Optional Add-Ins

  • Pinch of red pepper flakes
  • 1 tbsp nutritional yeast
  • 1 tsp Dijon mustard
  • 1 tsp maple syrup
  • 1 tbsp extra virgin olive oil
  • 1 tsp white miso paste

Preparation

Step 1


Add the parsley, cilantro or basil, dill, green onion, garlic, tahini, lemon juice, salt, and black pepper to a food processor or high-speed blender.



Step 2


Blend until the herbs are finely chopped.



Step 3


With the blender running, slowly add the water, beginning with ¼ cup, until the dressing becomes smooth and reaches your desired consistency.



Step 4


If using any optional ingredients, blend them in now.



Step 5


Taste and adjust the seasoning, adding more lemon juice for brightness, salt to taste, or a pinch of red pepper flakes for a little heat.



Step 6


Drizzle over green salads, grain bowls, roasted vegetables, wraps, sandwiches, pasta salads, falafel, or use as a dip for fresh vegetables.
