About the Recipe

This homemade Italian dressing is bright, herbaceous, and easy to make. Olive oil, vinegar, lemon, garlic, Dijon, and dried herbs create a balanced dressing for salads, vegetables, or marinades.

Ingredients

  • 6 tbsp extra virgin olive oil
  • 3 tbsp white wine vinegar
  • 3 tbsp fresh lemon juice
  • 1½ tbsp fresh parsley, finely chopped
  • 1½ tsp agave
  • 1 tbsp Italian seasoning
  • 1½ tsp dried oregano
  • ¾ tsp dried thyme
  • 1 garlic clove, finely grated
  • ¾ tsp Dijon mustard
  • Heaping ¼ tsp sea salt
  • Freshly ground black pepper, to taste

Optional Add-Ins

  • 1 tbsp fresh basil, finely chopped
  • ½ tsp crushed red pepper flakes
  • 1 tbsp vegan Parmesan
  • ½ tsp garlic powder

Step 1


Add the olive oil, white wine vinegar, lemon juice, parsley, agave, Italian seasoning, oregano, thyme, garlic, Dijon mustard, salt, and black pepper to a mason jar.



Step 2


Secure the lid and shake vigorously for 30 seconds, until the dressing is smooth and emulsified.



Step 3


Alternatively, whisk all of the ingredients together in a small bowl until well combined.



Step 4


Taste and adjust the seasoning, adding more salt, black pepper, lemon juice, or agave to suit your taste.



Step 5


Drizzle over green salads, chopped salads, pasta salads, roasted vegetables, grain bowls, or use as a marinade for tofu, tempeh, or grilled vegetables.
