About the Recipe

This lemon vinaigrette is bright, zesty, and easy to make. Dijon mustard, garlic, Italian seasoning, and olive oil create a balanced dressing for salads, vegetables, and grain bowls.

Ingredients

  • ¼ cup extra virgin olive oil, plus more if desired
  • Zest of 1 lemon
  • Juice of 2 lemons, about ¼ cup
  • 1 tbsp Dijon mustard
  • 2 garlic cloves, minced
  • 1 tbsp Italian seasoning
  • ¾ tsp sea salt, or to taste
  • ¼ tsp freshly ground black pepper, or to taste
  • 1 tsp pure agave, optional

Optional Add-Ins

  • 1 tbsp fresh parsley, finely chopped
  • 1 tbsp fresh basil, finely chopped
  • 1 tsp maple syrup, instead of agave
  • ¼ tsp red pepper flakes
  • 2 tbsp vegan Parmesan
  • 1 tbsp water, to thin if desired

Step 1


Add the olive oil, lemon zest, lemon juice, Dijon mustard, garlic, Italian seasoning, salt, black pepper, and agave if using to a mason jar.



Step 2


Secure the lid and shake vigorously for 30 seconds, or until smooth and well emulsified.



Step 3


Alternatively, whisk the lemon juice, zest, Dijon, garlic, Italian seasoning, salt, pepper, and agave together, then slowly drizzle in the olive oil.



Step 4


Taste and adjust the seasoning. Add more lemon juice, olive oil, salt, or pepper as desired.



Step 5


Serve over green salads, pasta salads, roasted vegetables, grain bowls, quinoa salads, or use as a marinade.
