Tender roasted asparagus is served with a rich, creamy miso hollandaise and garlicky sautéed spinach. It is an elegant spring dish that works as a light meal or side.

Ingredients
Roasted Asparagus
- 1 bunch asparagus
- Olive oil
- Freshly ground black pepper
Miso Hollandaise
- 1 package silken tofu
- 1 tbsp white miso paste
- 2 tbsp nutritional yeast
- ½ tsp garlic granules
- 1 tsp fresh lemon juice
- ½ tsp black pepper
- ¼ cup melted vegan butter
- 2 tbsp hot water
- Garlic Spinach
- 1 bunch baby spinach
- 3 garlic cloves, minced
- Olive oil
- Freshly ground black pepper

Preparation
Step 1
Preheat the oven to 205°C (400°F) and line a baking tray with parchment paper.
Step 2
Trim the woody ends from the asparagus. Toss with olive oil and black pepper, then roast for 20–25 minutes until tender with lightly crisp edges.
Step 3
Meanwhile, blend the silken tofu, miso paste, nutritional yeast, garlic granules, lemon juice, and black pepper until smooth. Blend in the melted vegan butter and hot water until creamy and pourable. Adjust seasoning to taste.
Step 4
Heat a little olive oil in a skillet and sauté the garlic until fragrant. Add the spinach and cook until just wilted.
Step 5
Arrange the roasted asparagus on a serving platter, spoon over the miso hollandaise, top with the garlic spinach, and serve immediately.
