These Spicy TVP Tacos are packed with bold Mexican-inspired flavors. Crispy, seasoned TVP is layered over creamy homemade guacamole and topped with vibrant mango salsa, crisp lettuce, fresh cilantro, and your favorite hot sauce.

Ingredients

Spicy TVP Filling


  • 8 oz (225 g) TVP soy chunks
  • 2 cups vegetable broth
  • 2 tablespoons olive oil
  • 2–3 tablespoons soy sauce or tamari


Mexican Seasoning


  • 3 teaspoons chili powder
  • 2 teaspoons smoked paprika
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon dried oregano
  • ¼–½ teaspoon cayenne pepper (adjust to taste, I like spicy)
  • Salt and black pepper, to taste


Fresh Mango Salsa


  • 1 ripe mango, peeled and diced
  • 1 red onion, finely diced
  • 2 ripe vine tomatoes, diced
  • 1–2 jalapeños, finely diced
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt, to taste


Guacamole


  • 2 ripe avocados
  • ½ white onion, finely diced
  • 1 cup cherry tomatoes, chopped
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and black pepper, to taste


For Serving


  • 8 corn or flour tortillas
  • Thinly sliced iceberg lettuce
  • Fresh cilantro
  • Your favorite hot sauce
  • Lime wedges

Preparation

Step 1


Place the TVP soy chunks in a bowl and cover with the hot vegetable broth. Let soak for 10–15 minutes, or until fully rehydrated.



Step 2


Drain the soy chunks well and squeeze out as much liquid as possible.



Step 3


Heat the olive oil in a large skillet over medium-high heat.



Step 4


Add the soy chunks and cook for 4–5 minutes, stirring occasionally, until they begin to brown.



Step 5


Drizzle the soy sauce over the soy chunks and continue sautéing until most of the liquid has evaporated.



Step 6


Sprinkle over the chili powder, smoked paprika, paprika, cumin, garlic powder, onion powder, oregano, cayenne, salt, and black pepper. Cook for another 2–3 minutes, until browned with crispy edges. Taste and adjust the seasoning or spice level.



Step 7


In a medium bowl, combine the mango, red onion, tomatoes, jalapeños, cilantro, lime juice, and a pinch of salt. Gently toss and set aside.



Step 8


In a separate bowl, mash the avocados with a fork until mostly smooth. Stir in the white onion, cherry tomatoes, cilantro, lime juice, salt, and black pepper.



Step 9


Warm the tortillas.



Step 10


Spread a generous layer of guacamole over each tortilla and top with the spicy TVP filling.



Step 11


Spoon the fresh mango salsa over the TVP.



Step 12


Finish with shredded iceberg lettuce, fresh cilantro, and hot sauce. Serve immediately with lime wedges.
