About the Recipe
This sweet potato curry is rich, creamy, and filled with warming spices. Tender sweet potato, hearty chickpeas, and spinach simmer in a fragrant tomato-coconut sauce for a nourishing and satisfying meal that is perfect with rice and warm naan.

Ingredients
Sweet Potato Curry
- 2 tbsp olive oil
- 1 large yellow onion, finely chopped
- 5 cloves garlic, minced
- 1 tbsp fresh ginger, minced
- 1 tbsp ground cumin
- 1 tbsp curry powder
- 2 tsp ground turmeric
- 3 tsp ground coriander
- 1 tsp red pepper flakes (or more to taste)
- 1 medium to large sweet potato, peeled and cubed
- 1 (15 oz / 425 g) can chickpeas, drained and rinsed (or 1½ cups cooked chickpeas)
- 2 (14 oz / 400 g) cans diced tomatoes, with juices
- 2 (13.5 oz / 400 ml) cans light coconut milk
- 1 package baby spinach, to taste
- Salt, to taste
- Freshly cracked black pepper, to taste
To Serve
- Steamed white or brown rice
- Warm naan (see my Naan recipe)
- Fresh cilantro
- Lime wedges
- Red pepper flakes

Preparation
Step 1
Heat the olive oil in a large pot over medium heat. Add the onion and cook for 5–7 minutes until softened. Stir in the garlic and ginger and cook for 1 minute.
Step 2
Add the cumin, curry powder, turmeric, coriander, and red pepper flakes. Cook for 30–60 seconds, stirring constantly, until fragrant.
Step 3
Add the sweet potato, chickpeas, diced tomatoes, and coconut milk. Stir and bring to a gentle simmer. Reduce the heat to medium-low and cook for 20–25 minutes, stirring occasionally, until the sweet potato is fork-tender.
Step 4
Stir in the spinach and cook for 2–3 minutes until wilted. Season with salt and black pepper. Add vegetable broth or water if you prefer a thinner curry.
Step 5
Serve over rice with warm naan. Garnish with cilantro, red pepper flakes, and lime if desired.
