This vegan Caesar dressing is creamy, tangy, and packed with savory flavor from tahini, capers, garlic, lemon, and Dijon mustard. It comes together in minutes and can be adjusted with warm water until it reaches your preferred consistency. Add nutritional yeast, white miso, or vegan Parmesan for an even cheesier, more deeply savory finish.

- ¼ cup tahini
- Juice of ½ large lemon (about 2–3 tbsp fresh lemon juice)
- 2 garlic cloves, finely grated or minced
- 2 tsp capers, very finely chopped (or more to taste)
- 2 tsp caper brine
- 1 tsp Dijon mustard
- 1–3 tbsp warm water, as needed to thin
- Salt and freshly ground black pepper, to taste
- Optional Add-Ins
- 2 tbsp nutritional yeast (for a cheesier flavor)
- 1 tsp white miso paste (for extra umami)
- 1 tbsp vegan Parmesan

Step 1
Add the tahini, lemon juice, garlic, chopped capers, caper brine, Dijon mustard, salt, and black pepper to a small bowl or mason jar.
Step 2
Whisk until smooth. The dressing will thicken at first—this is completely normal.
Step 3
Add the warm water, 1 tablespoon at a time, whisking after each addition until the dressing reaches your desired consistency.
Step 4
If using any of the optional ingredients, whisk them in now.
Step 5
Taste and adjust the seasoning. Add more lemon juice for brightness, caper brine for a saltier flavor, nutritional yeast for a cheesier taste, or black pepper to taste.
